Three Simple Salad Recipes That Help You Keep Your Diabetes In Check

You may think that all salads are healthy, but this is not the case, as some of them contain hidden sugars and fats. Nevertheless, the following salad recipes are delicious, highly tempting, and perfect for keeping diabetes in check.

Use the following recipes to in combination with a healthy meal:

1.Spinach with Garlic Vinaigrette

You will need the following ingredients:

  • six cups baby spinach leaves or six ounces
  • two minced garlic cloves
  • one fourth cup sliced red onion
  • one fourth teaspoon of black pepper (ground)
  • one eight teaspoon of salt
  • one and a half tablespoon of extra virgin olive oil
  • one tablespoon of white wine vinegar and half a teaspoon of Dijon mustard

Process:

  1. Mix all of these ingredients, except the red onion and spinach in a large bowl then stir it well
  2. Afterwards, add the 6 cups spinach and red onion
  3. Toss to coat

2.Endive and Cucumbers Salad

You will need the following ingredients:

  • 200 gr. Of cucumbers
  • 90 gr. Of endives
  • 10 grams of black olives
  • olive oil
  • vinegar
  •  salt

Process:

  1. Get the endives ready. Peal and cut the cucumbers.Then wash them.
  2. Mix all the ingredients in a bowl.
  3. For extra flavor add vinegar, salt and olive oil.

3.Cucumber salad

You will need the following ingredients:

  • 1 large English cucumber or two medium cucumbers
  • 2 tablespoons of toasted sesame seeds
  • one teaspoon stevia
  • one fourth teaspoon salt
  • one fourth cup rice vinegar

Process:

  1. 4 servings of one cup each.
  2. Peel the cucumbers in order to remove the green stripes. Then slice the cucumbers in two halves and scrape the seeds with a spoon.
  3. Then cut the cucumbers into this pieces with a food processor or a knife. Place them into a double layer of paper towel and squeeze (in order to get rid of the unnecessary moisture).
  4. Mix the salt, stevia and vinegar in a medium bowl. Stir it well so as to dissolve it. Then add the cucumbers and sesame seeds.
  5. Stir well to create a good mixture and serve.
